Cake Batter Cinnamon Rolls- with yoyomax12

These cinnamon rolls are a quirky and delicious combination of "birthday cake" flavour and traditional cinnamon buns. Yummy!

2 1/2 cups very warm water

1 box Rainbow Chip cake mix (dry mix only)

1 tsp vanilla

2 packages instant active dry yeast

5 cups bread flour (I subbed all purpose flour)

Filling:

1/2 cup butter softened

1 cup brown sugar

1 cup yellow cake mix (dry powder)

cinnamon (about 2 tbsp)

Sprinkles (about 1/4 cup)

Frosting:

1/4 cup butter softened

1/2 cup yellow cake mix (dry powder)

1 tsp vanilla

3 cups powdered sugar

3-6 tbsp milk or cream

Sprinkles for decoration

Add yeast and water to a large bowl and stir, add in the rainbow chip cake mix and flour. Stir and knead with a dough hook attachment for about 3 minutes.

Remove dough and place in a clean greased bowl, cover and let rise in a warm place until doubled (about 1.5 hours). I put mine in my oven with just the light on.

Once doubled, turn out onto a heavily floured surface and pat out into a large rectangle (at least 9x13"). Spread butter over surface, sprinkle with brown sugar, cinnamon, yellow cake mix and sprinkles.

Roll up from short or long end (this will change the size of the rolls) and cut into 1.5 to 2 inch slices and place flat side down in a greased baking dish. The recipe recommends 12 rolls per pan, with at least 2 inches of space between them.

Cover rolls with some greased plastic wrap and allow to rise until doubled in size, about 1 hour.

Bake at 350F for 1-20 minutes until browned.

While cinnamon rolls are baking mix up the frosting ingredients (except sprinkles), adding only enough water to make a spreadable frosting (not too runny).

Spread frosting over warm rolls and sprinkle with additional sprinkles.

These freeze well.
