Chicken Tacos are a stable in my house, on the table at least every couple weeks. For these chicken tacos, I show you how to make a chimichurri sauce, which is a Latin American condiment used a lot like we'd use ketchup in the US. The Chimichurri sauce is heavy on herbs and garlic, and spiked with a bit of red wine vinegar, which give it a nice strong bite. I love using it as a salsa for these chicken tacos.
These tacos are easy to make, and I topped them very simple with some caramelized red pepper, and cheese, but by all means experiment with other toppings. Hope you enjoy them!!
