As requested, here is one of my favourite chicken recipes. Say NO to blend flavours and try this super easy lunch idea. I usually put the salad leaves and chicken inside a warm whole wheat pita. It's so tasty, you would be surprised it only took a few minutes to prepare :)

Ingredients:

Chinese stir-fry chicken

*Makes 2 servings so adjust accordingly*

- 1 tbsp olive oil

- 300g skinless chicken breasts, cut into bite-size pieces

- 1 red bell pepper, cut into strings

- 1/2 red onion, sliced

- 2 garlic cloves, minced

- 1 tbsp of ginger, grated

- salt & pepper for seasoning

Chicken Sauce

- 1 tsp hot sauce

- 1 tbsp soy sauce

- 1 tbsp Teriyaki sauce

- 1/4 cup chicken stock

- 1/4 cup honey

Summer Vegetable Relish

*Makes 2 servings so adjust accordingly*

- 2 celery stalks, diced

- 1/3 English cucumber, diced

- 1/2 red onion, diced

- 1 ripe tomato, diced

- 1 tsp olive oil

- lemon juice, 1/3 of a lemon

- salt & pepper for seasoning

Sides:

- salad leaves

- 1 whole wheat pita, cut in half

- apple slices

- dried papaya chunks
