Like many of the things that I have made during this project, I have never had rice croquettes before. I have had plenty of salmon croquettes in my meat eating days, but never rice croquettes, or Italian Arancini. Now that it has come up for me to make in Paula Deen's Southern Cooking Bible, I do remember seeing it made on Food Wishes. Even he made it with chicken giblets though, so I am so ready to make rice croquettes vegan.

Vegan Rice Croquettes Recipe - Baked Rice Croquettes

Ingredients:

1/4 cup water

1 tablespoon ground flax seed

2 cups cooked rice

1 cup nutritional yeast

1 tablespoon dried chopped onion

1 tablespoon basil

1 tablespoon olive oil

Salt and pepper

Directions:

Preheat oven to 350 degrees F.

In a cup, stir together water and ground flax seed. Sit is aside to set.

In a large bowl, stir together cooked rice, nutritional yeast, chopped onion, basil, olive oil, salt, and pepper.

Once the rice mixture becomes well combined and sticky, use a cookie scooper or small spoon to create rice balls.

I place mine in a non-stick many muffin tin, but you can place yours on a baking sheet if you lack one.

Back for 20 minutes if you want a crisp crust and 30 minutes for a crunchy crust.

Now you rice croquettes are ready to appetize your guest, or just you if you are in to it.
