Mini Meatloaf Brains: The Walking Dead Inspired Halloween Recipe

Ingredients

19 oz meatloaf mix (ground beef & pork)

3 oz garlic croutons

ground black pepper

1/4 tsp cayenne pepper

1 tsp thyme

1/4 cup rough chopped onion

2 cloves garlic

3/4 tsp salt

1 egg

1/4 cup minced parsley

Glaze

1/2 cup ketchup

1 tsp ground cumin

dash worcestershire sauce

dash hot pepper sauce

1 tbsp honey

1 tsp apple cider vinegar

Directions

Heat oven to 325 degrees.

In a food processor add croutons, black pepper, cayenne pepper, and thyme. Pulse the mixture until combined and a fine texture. Pour this mixture into a large bowl.

In the same food processor combine onion, garlic, and parsley until it is finely chopped.

Add this vegetable mixture to the bowl with the bread crumb mixture. Add the meatloaf mix, the salt and egg to this bowl and mix using your hands until well combined.

Pack this mixture into small bread loaf pans or if making meatloafs into little brains, a small brain mold. Turn these molds out onto a parchment paper lined baking sheet. Bake the meatloafs for 45 minutes or until they are cooked throughout (be very sure of this since using pork). The temperature should be at least 160 degrees fahrenheit when the meat thermometer is inserted in the middle of the meatloafs.

In a small bowl combine the ketchup, cumin, worcestershire, hot pepper sauce, honey, and apple cider vinegar. Brush the glaze on the meatloafs after the meatloafs have been in the oven for 10 minutes.
