100% Whole Wheat Pancakes with pumpkin and spice. Just sweet enough.

This recipe is...

► Plant-Based (No Animal Products)

► Less Oil (Than Regular Pancakes!)

► Less Sugar

► Standard Ingredients (Nothing from Specialty Stores)

► Easy Difficulty | Serves 2 | 20 Min Prep | 10 Minute Cooking

Ingredients ► Whole Wheat Pumpkin Pancakes

1 Cup Whole Wheat Flour

1 Cup Almond Milk

1 TBSP Lemon Juice

1/3 Cup Pumpkin Puree

1 TBSP Coconut Oil, Melted

1/2 TSP Vanilla Extract

2 TBSP Maple Syrup

1 TSP Baking Powder

1/2 TSP Baking Soda

Pinch of Salt

1 TBSP Pumpkin Pie Spice (Or Cinnamon/Allspice/Nutmeg)

1/4 TSP Cinnamon

Directions ► Whole Wheat Pumpkin Pancakes

1. Combine all wet ingredients: Almond Milk, Lemon Juice,Coconut Oil, Vanilla Extract, Maple Syrup.

2. Combine all dry ingredients: Whole Wheat Flour, Baking Powder, Baking Soda, Salt, and Spices. Set Aside.

3. Sift dry ingredients into wet, mix until just combined.

4. Over medium high heat, spray pan with oil. Pour 1/4th Cup Pancake Batter into griddle. Cook about 1 minute per side. Bubbles will form when ready to flip.
