Cookin' with Colin - Baked Eggs
In this episode, the first episode, I shall be cooking baked eggs with bacon and mushrooms. This simple and filling dish is perfect for breakfast or brunch, or a warming pick me up at anytime of the day for that matter. To make it yourself you're going to need...
5 rashers smoked (or unsmoked if you prefer) Bacon
250g Sliced Mushrooms
3 Spring Onions
1 small White Onion
25g Butter
5 Eggs
100ml Double Cream
100g Cheddar Cheese
Pre heat the oven to 190 Celsius.
Cut the bacon into pieces of a size that pleases you, the same goes for the onions, spring onion and the mushrooms - just be aware that the larger the onions are cut the more time they're going to need.
Heat a pan to a medium high heat, there should be no smoke coming from the pan then add the bacon and keep it moving until its turned a nice crispy bacon kind of colour.. Then add the onion and cook until its softened.
Add a knob of butter and once that's melted add the mushrooms and cook until they are soft.
Remember to keep the pan and ingrediants moving from time to time but don't over do it.
You are now ready to do the next part, before its had a chance to cool add the mixture to a buttered casserole dish and make five wells.
Crack an egg into each well, drizzel some cream on top and then sprinkle some cheese to finish.
Bake in the oven at 190 for 10-12 minutes, or slightly longer for solid yolks.
Serve immediately, preferably with something nice and crispy like a hash brown, what a perfect combination of flavour and texture.
