"Asian cuisine" most often refers to East Asian (Chinese, Japanese, and Korean), Southeast Asian cuisine and South Asian cuisine. In much of Asia, the term does not include the country's native cuisines. For example, in Hong Kong and mainland China, Asian cuisine is a general umbrella term for Japanese cuisine, Korean cuisine, Filipino cuisine, Thai cuisine, Vietnamese cuisine, Malaysian and Singaporean cuisine and Indonesian cuisine; but Chinese cuisine and Indian cuisine are excluded.The term Asian cuisine might also be used to address the eating establishments that offer wide array of Asian dishes without rigid cuisine boundaries; such as selling satay, gyoza or lumpia for appetizer, som tam, rojak or gado-gado for salad, offering chicken teriyaki, nasi goreng or beef rendang as main course, tom yam and laksa as soup, and cendol or ogura ice for dessert. In modern fusion cuisine, the term Asian cuisine might refer to the culinary exploration of cross-cultural Asian cuisine traditions. For example combining the culinary elements of Vietnam and Japanese, Thai and Malay, or Indonesian and Chinese.

Japanese cuisine is the food—ingredients, preparation and way of eating—of Japan. The traditional food of Japan is based on rice with miso soup and other dishes, each in its own utensil, with an emphasis on seasonal ingredients. The side dishes often consist of fish, pickled vegetables, and vegetables cooked in broth. Fish is common in the traditional cuisine. It is often grilled. Fish may be served raw as sashimi or in sushi. Seafood and vegetables are also deep-fried in a light batter as tempura.

Apart from rice, staples include noodles, such as soba and udon. Japan has many simmered dishes such as fish products in broth called oden, or beef in sukiyaki and nikujaga. Foreign food, in particular Chinese food in the form of noodles in soup called ramen and fried dumplings, gyoza, and western food such as curry and hamburger steaks are commonly found in Japan. Historically, the Japanese shunned meat, but with the modernization of Japan in the 1860s, meat-based dishes such as tonkatsu became common.

Chinese cuisine includes styles originating from the diverse regions of China, plus styles of Chinese people in other parts of the world. The history of Chinese cuisine in China stretches back for thousands of years and has changed from period to period and in each region according to climate, imperial fashions, and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese peoples due both to imperial expansion and from the trade with nearby regions in pre-modern times as well as from Europe and the New World in the modern period.

Styles and tastes also varied by class, region, and ethnic background. This led to an unparallelled range of ingredients, techniques, dishes and eating styles in what could be called Chinese food, leading Chinese to pride themselves on eating a wide variety of foods while remaining true to the spirit and traditions of Chinese food culture.

Thai cuisine is the national cuisine of Thailand. Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter.

1 tbsp sea salt (3% weight of cabbage)

1 tsp red pepper flakes

a clove of sliced garlic

2g chopped kombu kelp

【作り方】

1、白菜をザッと洗って水気を切る。

2、食べやすい大きさに切る。

3、漬け物容器に入れる。

4、白菜の重さの3%の塩を加える。約大さじ1杯です。

5、手で混ぜて塩を全体になじませる。

6、押し蓋をする。

7、白菜の重さの3倍の漬物石をのせ、半日置く。

8、水が上がったら白菜を軽く絞り、別の容器に移す。

9、唐辛子、ニンニク、昆布を入れる。昆布はたくさん入れるとネバネバするので、少量

­を入れましょう。

10、箸でかき混ぜ、味がなじんだら食べ頃。ニンニクは風味づけなので、食べる時は取

­り除くとよいでしょう。

11、小皿に取り分け、お好みでお醤油をかけていただく。

白菜漬けはご飯によく合います。

2、Cut cabbage leaves into bite-sized pieces.

3、Put the cabbage into a pickling pot.

4、Add salt. (3% weight of cabbage)

5、Mix this well in the bowl.

6、Cover the bowl with a plate.

7、Put a pickle press which is 3 times heavier than the cabbage.

Let it sit for about half a day.

8、When the water seeps out from the cabbages, squeeze the cabbage slightly with your hands and put into another bowl.

9、Add red pepper flakes, garlic slices and kombu kelp.

10、Mix well, let it for a few hour. It's done.

Garlic gives the pickle a good flavor but you can remove them before you eat.

11、Arrange the the cabbage on a small plate.

Add a little soy sauce if desired.

Hakusai Zuke goes really well with rice.

2、白菜は根元から半分くらいまで切り込みを入れ、後は手で割く。こうすると、葉がば

3、さらに包丁を入れて、また手で半分に割き、4つ割りにする。

4、白菜をザッと洗って水気を切る。

5、切り口を上にしてざるに広げ、半日ほど天日干しにする。干す事によって余計な水分

­が除かれ、甘味が増します。

6、漬物容器の底に粗塩を、少しふっておく。

7、粗塩を一つかみ握り、白菜の軸と軸の間に入るよう振り入れる。

8、表面にも塩をすり込む。

9、白菜の切り口を横にして、葉と軸を互い違いに入れる。

10、1段目を敷き詰めたら、赤唐辛子と昆布を散らす。

11、2段目は下の段と向きが直角になるように敷き詰める。

12、また赤唐辛子と昆布をふる。

13、同じようにして残りの白菜を詰める。

14、残った粗塩をすべて上にふる。

15、手でギュッと白菜を押して平らにする。

16、外側の葉をかぶせる。

17、押しぶたをし、おもしを2個(白菜の重量の2倍)のせる。

18、冷暗所に置いて、水が上がるのを待つ。約3日間で水が上がります。

19、押しぶたより水が上にきたら重石を半分に減らす。あと、3~4日で食べ頃となる

21、器に盛り付ける。

2、Slice the cabbage to the middle from the root end and rip apart by hands.

Running the knife through all the way would unnecessarily cut off the cabbage leaves.

3、Do the same for each half to make quarters.

4、Rinse the cabbage leaves and drain.

5、Set vegetable into a sunny location for half a day. It makes vegetables sweeter.

6、Sprinkle some salt at the bottom of the pickling bucket.

7、Peeling back the leaves one by one, sprinkle in some salt, concentrating on the cores.

8、Rub the surfaces of leaves with salt.

9、Place cabbage in a pickling bucket.

Alternate the direction of the leaves and repeat the same process.

10、When the first layer is placed, sprinkle some kombu kelp and red chili pepper flakes.

11、Line the second layer perpendicular to the first layer.

12、Sprinkle red chili pepper flakes and kombu kelp again.

13、Repeat same procedure with the rest of the cabbage.

14、Add the remaining salt.

15、Press down with your hands.

16、Cover the top with the reserved outer leaves.

17、Place a wooden or plastic plate on top.

Lay two pickle presses at least 2 times the weight of the cabbage.

18、Wait for 3 days until the water seeps out from the cabbages completely covers the cabbages.

19、Remove a pickle press and wait for 3 to 4days.

20、Rinse the cabbage and cut roughly into bite size pieces. Squeeze them slightly with your hands.

21、Place the cabbage on a serving plate.

Pack pickles into ziploc bags or containers.

Store them in the refrigerator. It will keep for a week.

Onions sliced - 2

Flakes of garlic - 3 minced

Carrot sliced thin and broad - 1

Babycorn sliced thin - 5 pieces

Red, yellow and green capsicum - one in each

Sugar - 1 /2 tsp

For The Sauce:

Tomato purée - 1/4 Cup

Light soya sauce - 1tsp

Few drops of Tabasco sauce

Corn flour - 1Tbl.sp

Water - 2 1/2 Cups

Salt

Ajinomoto/ Monosodium glutamate - 2 pinches(M S G)

Red chilli powder - 1/2 tsp

METHOD

1. Heat a non stickpan. Spread sliced onions sprinkled with few pinches of salt.

2. Close with a lid and keep in high flame for a minute. Sauté it with sugar until colour changes.

3. Add carrots, Baby corn and fry for one minute. Sprinkle M S G and stir fry for few minutes. Pour the sauce ingredients which is mixed together and cook until thick and it gets a shine.
