1/4 c : Black Olives, Pitted,
1/4 ts : Prepared Mustard

15 1/2 oz : Can Garbanzo Beans, Drained
2 tb : Olive Oil
1/2 c : Roasted Red Peppers

1/2 c : Low-fat Salami, Sliced

Cream of Tomato Soup
Cream of tomato soup,the most popular soup in Indian cuisine. This soup is very easy to make and is loved by all. Make sure to serve it with bread croutons as they give a nice crunch to this soup...
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Makes 2 servings
Ingredients
4 cups finely chopped riped tomatoes
1 bayleaf (tejpatta)
3 whole peppercorns (kalimirch)
1 1/2 tbsp butter
1 tbsp plain flour (maida)
1/4 cup tomato puree
2 tsp sugar
salt and freshly ground black pepper powder to taste
1 1/2 tbsp fresh cream
For The Garnish
2 tsp fresh cream
1/4 cup bread croutons
Method
1. Combine the tomatoes with 1 cup of water in a kadhai, add the bayleaf, peppercorns and cook on a medium flame for 8 to 10 minutes, while stirring occasionally.
2. Remove the bayleaf and discard it and allow to cool completely.
3. Blend in a mixer to a smooth purée.
4. Strain the purée and keep aside.
5. Heat the butter in a kadhai, add the plain flour and sauté on medium flame for 1 minute.
6. Add the prepared tomato mixture, 1 cup of water, tomato purée, mix well and cook for 1 minute.
7. Add the sugar, salt, pepper powder and fresh cream, mix well and cook on a medium flame for 2 minutes.
8. Serve hot garnished with fresh cream and bread croutons.

Lynn demonstrates how to make a delicious, healthy black bean dip perfect for Halloween or any time of the year. Pipe a spider web design on this dip and it would be great for a party. This recipe comes from Ellie Krieger.
For the dip:
1 Tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 Tablespoons seeded and minced jalapeno pepper
2 (15 ounce) cans black beans, drained and rinsed (I used low sodium)
¼ cup fresh lime juice
½ teaspoon ground cumin
2 Tablespoons water
½ teaspoon salt
¼ teaspoon ground black pepper, or to taste
For the spider web garnish:
¼ cup reduced-fat sour cream
1 teaspoon fresh lime juice
1 small plastic spider (optional, for decoration)
Tortilla chips, for serving
Heat the oil in a medium skillet over medium-high heat. Add the onion and cook, stirring, until softened, about 5 minutes. Stir in the garlic and jalapeno and cook for 1 minute.
Place the beans in a food processor. Add the onion mixture and the remaining ingredients and process until smooth. Spread the dip into a wide, shallow, serving dish.
To make the spider web garnish, stir the sour cream and lime juice together in a small bowl. Place it into a plastic bag and snip a small hole in the corner of the bag. Pipe the sour cream mixture onto the dip in the shape of a spider web. Place the plastic spider on top. Serve with chips.

How to make Roasted Winter Vegetables
Ingredients
A medium pumpkin, peeled, seeded and diced into chunks
2-3 potatoes, unpeeled and cut into chunks
2 onions, cut into wedges, leaving the root intact
2 turnips, peeled and cut into wedges
2 beets, peeled and cut into chunks
2 cloves of garlic, minced
1 tsp of cumin seed
1/4 cup of extra virgin oil
1/4 cup of lemon juice
2 tbsp of brown sugar
salt and pepper, to taste
Instructions
1. Preheat the oven to 400 F.
2. Prepare beets, protecting your hands and cutting board as best you can as beets will bleed and stain just about everything that they touch.
3. Now spread the vegetables on a roasting pan.
4. Place the beets separately from the other vegetables on parchment paper so they don't stain the other vegetables.
5. Combine garlic, cumin seed, extra virgin olive oil, lemon juice, brown sugar and pepper.
6. Pour this mixture on the vegetables and toss to coat evenly.
7. Season everything with salt.
8. Bake at 400 F for 25-35 minutes or until tender and golden brown.

1 bunch asparagus
1 pack prosciutto
olive oil
black pepper
Directions:
Preheat oven to 400 degrees F. Take the prosciutto and cut into strips. Roll an asparagus stalk with the prosciutto and place on a baking sheet, about half an inch apart. Drizzle with olive oil and sprinkle with the black pepper. Bake for about 8 minutes and let cool for 5 minutes. Serve and enjoy!

Now that it has come up for me to make in Paula Deen's Southern Cooking Bible, I do remember seeing it made on Food Wishes. Even he made it with chicken giblets though, so I am so ready to make rice croquettes vegan.

Vegan Rice Croquettes Recipe - Baked Rice Croquettes
Ingredients:
1/4 cup water
1 tablespoon ground flax seed
2 cups cooked rice
1 cup nutritional yeast
1 tablespoon dried chopped onion
1 tablespoon basil
1 tablespoon olive oil
Salt and pepper
Directions:
Preheat oven to 350 degrees F.
In a cup, stir together water and ground flax seed. Sit is aside to set.
In a large bowl, stir together cooked rice, nutritional yeast, chopped onion, basil, olive oil, salt, and pepper.
Once the rice mixture becomes well combined and sticky, use a cookie scooper or small spoon to create rice balls.
I place mine in a non-stick many muffin tin, but you can place yours on a baking sheet if you lack one.
Back for 20 minutes if you want a crisp crust and 30 minutes for a crunchy crust.
Now you rice croquettes are ready to appetize your guest, or just you if you are in to it.

1 1/2 cups of all purpose flour
1 tsp of baking soda
1 tsp of pumpkin pie spice
1/4 tsp of baking powder
1/2 tsp of salt
1/3 cup of chopped pecans
1/3 cup of raisins
1/4 cup of butter, softened
1 cup of sugar
3 eggs
1 cup of canned pumpkin
1/4 cup of orange juice
1/2 tsp of vanilla
Instructions
1. In medium bowl, stir together the flour, baking soda, pumpkin pie spice, baking powder and salt.
2. To a seprate bowl, add the pecans and raisins and mix with 1 tablespoon of the flour mixture.
3. In a large mixing bowl, at medium speed, beat together the butter and sugar until light and fluffy.
4. Beat in eggs, canned pumpkin, orange juice and vanilla until well blended.
5. Add remaining dry mixture to pumpkin mixture and beat at low speed until thoroughly blended.
6. Stir in reserved pecans and raisins.
7. Lightly grease a 9 x 5 x 3-inch loaf pan.
8. Pour in batter.
9. Bake in a pre-heated 350 F oven until lightly browned and a toothpick inserted in the center comes out clean-about 60-70 minutes.
10. Cool on a wire rack for 10 minutes.

5. Reserve the cooking liquid and boil until thickened. Pour over the squash.

You can never have too many dip recipes. Dips are easy to make and they're a lifesaver when you have unexpected company.
I love dips as part of a cocktail buffet. They fill up the spaces between the more complicated appetizers and make your table seem more bountiful.
This White Bean Dip with Pistachio and Cilantro has bright, fresh-tasting flavors. It uses cilantro and coriander seeds, which are the fresh leaves and the seeds of the same plant. If you don't like that taste, substitute fresh mint and skip the coriander seeds.
This dip goes well with pita chips, pita bread wedges, water biscuits or crudités. If you want to make your own pita chips, follow the recipe for Herbed Pita Crisps (
http://m.specialfork.com/blog/post/good-cooks-need-right-tools/) but omit the herbs -- you want a neutral chip to let the dip flavors shine.
It also makes a wonderful sandwich filling. Just spoon into pita bread halves along with sliced English cucumber sprinkled with a little salt and pepper. Yum!

2 cornish hens
1 can of jellied cranberry sauce
1/2 cup of dry white wine
1 tbsp of lemon juice
a few rosemary sprigs

Instructions
1. Preheat the oven to 350 F.
2. In a heavy 2-qt saucepan, combine jellied cranberry sauce, dry white wine and lemon juice.
3. Cook over medium heat, stirring constantly until cranberry sauce melts and mixture is smooth.
4. Rinse hens in cold water and pat dry.
5. Sprinkle the cavities with salt and pepper and a few rosemary sprigs.
6. Close the cavities and secure with wooden toothpicks and sprigs of rosemary.
7. Place hens, breast side up in a lightly greased shallow pan.
* When handling raw poultry, make sure you wash your hands to prevent the spread of bacteria.
8. Next, brush the hens with the cranberry mixture, coating all sides.
9. Bake at 350 F for 45 minutes, basting frequently with the cranberry sauce.

1 acorn squash, halved
1 apple, peeled, cored and sliced

a dash of cloves
Instructions
1. Preheat the oven to 350 F.
2. Grease a 1-quart baking dish.
3. Place the squash, skin side up, in the dish and cover. Bake for 30 minutes.
4. In a medium bowl combine the apple, butter, brown sugar, ground cinnamon, nutmeg and cloves.
5. Turn cut sides of the acorn squash up and top with the apple mixture.
6. Cover and bake 30 minutes longer or until the apples are tender.

2. Combine eggs, pumpkin puree, sweetened condensed milk and pumpkin pie spice and mix.
3. Pour the mixture into a pie shell.
4. Bake for 15 minutes at 425 F.
5. Then reduce the heat and bake for 35-40 minuets longer at 350 F.

2 lbs of potatoes, thinly sliced
1 cup of grated gruyère or emmenthaler cheese
1/2 cup of half and half
salt and pepper, to taste

2. Lightly grease a shallow 1 1/2 quart casserole dish with butter.
5. Arrange the sliced potatoes in the casserole dish and layer with melted butter. Season with salt and pepper and sprinkle with the cheese.
6. Layer with melted butter and half and half. Season with salt and pepper.
7. Top with more grated cheese and sprinkle with parmesan.
8. Bake the casserole covered for 30 minutes.
9. After 30 minutes, uncover and bake an additional 15 minutes or until the potatoes are tender.

Ingredients
4 large yellow or Vidalia onions, thinly sliced
6 tbsp of extra virgin olive oil
1 tbsp of sugar
2 quarts of beef broth
1/2 cup brandy (optional)
1 french baguette, sliced and toasted
Swiss cheese, either Emmenthal or Gruyere
Instructions
1. Slice 4 large onions, using a tight, thin slice.
2. In a large dutch oven, add extra virgin olive oil to coat the pan and then add the onions. Cook them over medium heat for 12 minutes, until they're tender and golden.
3. Add brandy if you like and let the alcohol burn off.
4. Next add sugar and beef broth, cover and bring to a boil.
5. Reduce the heat and simmer for 12 minutes.
6. Ladle the soup into a bowl.
7. Place a slice of baguette on top.
8. Cover with shredded gruyere and place slices of emmenthal over.
9. Place the bowls on a baking pan and broil until the cheese is melted.

This is my favorite Vegan Nachos recipe. They are "cheesy" with out cheese as they use nutritional yeast in the cheesy bean dip. They are very simple to put together and can be a delicious dinner as well. For the recipe visit my blog at

Whole Roasted Turkey HD

Ingredients
turkey
salt
ground black pepper
olive oil
butcher's twine
roasting pan
Turkey defrosting times: 8-12 lbs will take 1-2 days.
12-16 lbs will take 2-3 days.
Allow approximately 24 hours for every 5 lbs in a refrigerator set at 40 F.
Instructions
1. Preheat the oven to 325 F.
2. First remove the giblets and neck from the cavity. You can reserve these parts for the gravy.
3. Rinse the turkey with cold running water and drain well.
4. Blot dry with paper towels.
5. Season the inside cavity with salt and pepper.
6. Fold the wings under the body, to prevent the tips from burning.
7. Tie the legs together with butcher string.
8. Fold the neck skin and fasten it to the back with a skewer.
9. Drizzle the outside of the turkey with extra virgin olive oil.
10. Season generously with salt and pepper.
11. Place the turkey, breast side up, on a rack in a large, shallow roasting pan no more than 2.5 inches deep.
12. Insert an oven-safe thermometer into thickest part of the thigh, being careful it does not touch the bone.
13. Roast the turkey about 3-1/2 hours depending on the weight.
14. Frequently baste the turkey with the pan juices.
15. Continue to roast until the thermometer registers 165 degrees F.
16. Remove the turkey from the oven and allow the bird to rest for 15-20 minutes before carving

How to make Poppy Seed Dinner Rolls
Ingredients
2 envelopes of quick-rising dry yeast
1/3 cup plus 1/4 tsp sugar, divided
1 cup of warm water
2/3 cup of whole milk, room temperature
1/4 cup of oil
1 egg
1 tbsp of poppy seeds
5 1/3 cups of all purpose flour, divided
1 cup of unsalted butter, chilled
3 tbsp of unsalted butter, melted
non-stick spray
extra poppy seeds for garnish
Instructions
1. In a mixer bowl, dissolve quick-rising dry yeast and sugar in warm water and let it stand until the mixture is slightly foamy.
2. Attach the dough hook to the mixer and turn to speed 2. Add milk, oil, egg, sugar, poppy seeds and salt.
3. Mix well until everything is combined - about 30 seconds.
4. Gradually add flour to the batter and mix it until smooth-about 1 minute
5. Combine flour and chilled butter in a food processor (or you can use a pastry cutter) until the mixture resembles a coarse meal. Add this to the batter in the mixing bowl.
6. Turn to speed 2 and mix until the dry ingredients are incorporated.
7. Knead on speed 2 until smooth, about 2 minutes longer.
8. Add up to 1/3 of a cup of flour-more if the dough remains sticky.
9. Remove the bowl from the mixer and cover with a towel. Let the dough rise in a warm place for 30 minutes or until it nearly doubles in size.
10. Now coat 2 12-cup muffin tins with non stick cooking spray or butter.
11. On a floured surface, knead dough for about 4 minutes until it's smooth and elastic.
12. Divide the dough into 4 equal portions and place one portion on a floured surface. Refrigerate the remaining portions.
13. Roll out the dough to a 12x12x1/8-inch rectangle.
14. Cut the dough lengthwise into 6 2-inch strips and stack the strips to form 6 layers.
15. Cut the stacks into 6 equal portions, each about 2-inch squares.
16. Place each stack on their edge, cut side down, in the prepared muffin cups. Repeat with the remaining dough sections.
17. Cover with a towel and let the dough rise in a warm place for 30 minutes or until it nearly doubles in size.
18. After it has risen, heat your oven to 350 F.
19. Brush the tops of the rolls with melted butter and sprinkle with poppy seeds.
20. Bake in the oven for 25 minutes.

I made these chicken wings yesterday for the football game, and the hubs was pleased, as always. This is a delicious and healthy recipe for an appetizer at parties, lunch or dinner. I think it's a perfect snack to accompany any sporting event on tv. Football? Yes. Baseball? Yes. Badminton? YES and YES! Will you be making these wings for Monday night football tonight? I hope so!
Directions:
Add all ingredients in a large Ziploc bag, close, and shake until chicken wings are completely coated. Let marinate for about 30 minutes. Turn broiler on high and transfer wings to a baking sheet or broiler rack. Broil on high for 10-12 minutes on each side. If your chicken wings are smaller then broil for less time on each side. Remove from oven and drizzle wings with a little more hot sauce and serve with carrots, celery & ranch or bleu cheese dressing.
