Pumpkin Bread using Fresh Carving Pumpkin!
Wet:
⢠1½ c. raw shredded pumpkin (can use up to 2 cups)
⢠1 egg
⢠1/3 c. oil
⢠1/4 c. water
Dry:
⢠2/3 c. sugar
⢠1 1/4 cup flour
⢠3/4 teaspoon baking soda
⢠1/2 teaspoon salt
⢠1/4 teaspoon ground cinnamon
⢠1/4 teaspoon ground nutmeg
⢠1/8 teaspoon ground cloves
⢠1/8 teaspoon ground ginger
Gradually stir dry ingredients into wet ingredients. Pour into greased loaf pan and bake for 350 for 40-50 minutes- until toothpick comes out clean.
We also did a batch using 2 eggs and the bread turned out even more moist and had a really great flavor as well.
