Greetings! Let's continue our pumpkin fest and make some whoopie pies! Whoopie pies have their origins in New England. A cakey cookie that is then sandwiched with a sweet filling. Traditionally Whoopie pies are chocolate with a filling that consists of shortening and marshmallow fluff. These are a bit more festive and fill that need for a special sweet in light of the season.

Pumpkin and lots of spices are the basis for these lovely cakey treats. I have filled mine with a Maple cream cheese filling. You can go a lot of places with Whoopie pies and you can make any number of flavors. Banana,Strawberry, traditional chocolate, coffee, mocha, well the possibilities are endless as you can see.

I hope this gets you in the mood to do some fall baking. These would be wonderful taken to a potluck, to share at work or even with a neighbor. You can wrap these individually and freeze them. Take a couple out to thaw for about 30 minutes and you can enjoy them over time. You don't have to eat them all at once, these will freeze beautifully!
