Scared (as in "Scared Potatoes & Onions") is a Traditional term meaning "scared" around in the pan (using a small amount of oil - sautéing) as opposed to "Deep Fried" (like "Home Fries") or "French Fried" (using much more oil to cover / submerge while frying). The result is a Delicious batch of skillet fried goodness to enjoy
- as a meal or snack with ketchup or grits; or,
- as part of a Hearty Country Breakfast (Good any time of day) of eggs & grits with bacon, or ham, or sausage, or
- plain, just by themselves ... yeah, they're that good! ;-)
