Greetings! I have been asked to present a series of recipes that would be easy and appropriate for a Thanksgiving for 2. I am doing this in conjunction with the Today's Modern Family Website!

The premise of this series is when families have to send children for ordered visitation during the holidays, those Moms and Dads left behind may not feel like celebrating and may, in fact, wallow in self pity. We don't want that. We want you to look forward to the holidays even though you may be separated from your kids. You deserve to celebrate and have a memorable Thanksgiving meal.

Even though as Mothers and Fathers we define ourselves by our children, we are not in fact defined by them. They are a very special part of our lives. They are what we focus on during their time at home, however, there will come a time when we will let them go into the world and they will have their own families. We must remember that the holidays are important regardless of who we are with. Even if we are alone, we must mark those milestones throughout the year and make our own memories.

Now, lets work on the main course! If you are cooking for a couple of people, chances are that you don't want to approach the idea of cooking a large bird and then having to deal with all those leftovers. So this is a viable option.

I have taken some lovely turkey breast fillets that I got in the poultry section of my better grocer. They are the perfect size. One package usually has 3 fillets in it so that is perfect for two people with a bit leftover or for two hungry people.

You start with some prepared stuffing/dressing. It is perfectly acceptable to use a box mix and just dress it up with some chopped apples and dried cranberries or some extra sauteed veggies like celery onion, carrots or even some beautiful sauteed mushooms!

This is definitely easy. Lay the turkey fillets on top of the prepared stuffing, give them a brush with some melted butter, sprinkle with poultry seasoning, salt and pepper and cover the whole thing with foil and bake in a 350 degree oven for 30 minutes then remove the foil and bake for another 15 minutes and dinner is served! Make a great veggie on the side and you are ready for a lovely quite, Thanksgiving for Two
