Homemade Vanilla Bean Pudding

2 1/4 cups whole milk, divided

1/2 vanilla bean, seeds + pod

1/2 cup granulated sugar

3 Tbs cornstarch

1/4 tsp salt

1 egg yolk

1 Tbs butter

In a medium saucepan over medium heat add 2 cups milk. Cut vanilla bean in half then split lengthwise. Scrape seeds into saucepan and add pod.

In a separate bowl whisk 1/4 cup milk, salt, egg yolk and sugar. When milk begin bubble add egg yolk mixture to saucepan. Stir well and continue simmering until mixture thickens; be careful not to scorch. Pudding is ready when mixture is thick enough to coat a spoon.

Remove from heat; discard vanilla bean pod and add butter. Stir well and ladle into serving dishes; chill for two hours. Pleasant Tastings!
