MONSTER OATMEAL CHOCOLATE CHIP COOKIE RECIPE

First in a medium sized bowl,

add 1 cup all-purpose flour

1/4 cup unsweetened cocoa

1/2 tsp cinnamon

1/2 tsp baking soda

and 1/4 tsp salt

Then stir with a spoon until the ingredients are evenly mixed and set aside

Next, in a mixer,

add 1/2 cup of butter at room temperature

and beat until fluffy - almost like my monster costume :)

Then, add 2/3 cup brown sugar, 1/3 cup sugar and beat until blended.

Add 1 egg, 1/2 tsp vanilla extract

and 1/2 cup pumpkin puree - canned or made fresh - just like the puree made in my previous video recipe here:

and beat until just combined.

Now, slowly add in the flour mixture - half at a time - so you don't make a monster mess in your clean kitchen!

Finally, add in the last two ingredients

1 cup oats and 1/2 cup semi-sweet chocolate chips

that you mix with a spoon or spatula by hand.

Now, butter or grease a baking pan.

Then, Scoop heaping spoonfuls of dough, small or large (depending on your monster appetite), which you place 2 inches apart.

This recipe makes about a dozen or two cookies - depending on the size of your scoops.

Now, Bake in a preheated 350 degree Fahrenheit oven for about 10 to 15 minutes

or until the center is slightly firm and the top begins to crack.

Then pull your freshly baked oatmeal cookies, cool for just a moment, and enjoy a warm oatmeal cookie.
